     Pork Stir Fry

Ingredients
1 pork loin cut in 1/4 inch medallions
1/4 tsp garlic powder (minced is fine)
2 tsp oil divided
1 small onion
1 each small red and green pepper cut in chunks
2 tsp cornstarch
1 T soya sauce
1 can pineapple chunks with juice
1/2 cup Kraft low fat catalina dressing
 

Instructions
Toss pork with garlic powder. Heat 1 tsp oil and stir fry pork on med high heat until just cooked. Set aside. Stir fry vegetables in remaining oil for 2 min. Dissolve cornstarch in soy sauce and add to pan along with pine apple and dressing. Cook on med heat until sauce bubbles and thickens. Add pork and cook 1 min. more. serve with rice.
I have made with chicken. Was great. Also use way more veg. Celery carrot peppers onion bok choy mushrooms snow peas or snap peas broccoli cauliflower sliced water chestnuts. Pretty much what ever you have on hand.
I drain the pineapple juice and make the sauce in a separate pan. If using bok choy add at the end as it just needs to be warmed not really cooked.
