     Chinese Crab Wontons

Ingredients
8 Ounces Cream Cheese
1 Clove Garlic, minced
1 Teaspoon Ginger, grated
2 Teaspoons chives, chopped
1 Tablespoon soy sauce
Ground white pepper (black will work)
1/2 pound lump crab meat
1 Package square wonton wrappers
Small bowl of water
 
Vegetable oil for frying

Instructions
In a medium bowl, cream the softened cream cheese and add the garlic, ginger, chives, soy sauce, and pepper. Stir the mixture until smooth, and then add the crab meat. Add additional soy sauce and pepper to taste.
Lay a wonton wrapper in front of you and place 1 teaspoon of cheese mixture in the middle. Dip your finger in the water bowl and moisten the edges of the wrapper. Fold the wrapper in half to form a triangle. Press firmly to seal, and moisten the bottom corner of the triangle. Bring the left and right corners together and pinch firmly. Continue until all wrappers are filled.
Place a large wok or dutch oven over medium heat and fill with three inches of vegetable oil. Heat to 350-375 degrees F and place the wontons into the oil using a long spoon or tongs. Fry until golden brown. Remove and drain on a cooling rack. When cooled, serve with sweet and sour sauce or hot mustard.
