     Meat Loaf with Sun-Dried Tomatoes

Ingredients
2 oz sun-dried tomatoes
1 medium onion, finely chopped
1 bell pepper, finely chopped
1 tbsp olive oil
1 lb ground round
6 oz mozzarella cheese, shredded
2 eggs, beaten
2 cloves garlic
1 slice bread
 
2 tbsp milk
1 tsp dried basil
1 tsp salt
1/2 tsp dried oregano
1/2 tsp dried thyme
1 tsp black pepper

Instructions
Place sun-dried tomatoes in a small bowl and pour boiling water over them just to cover. Let stand 10 minutes until softened; drain tomatoes and chop finely. Set aside. Tear bread into pieces and soften in milk.
Preheat oven to 350F. Grease a 9x5x3-inch loaf pan. Place onion, bell pepper, and olive oil in a small bowl and soften in microwave on high heat for 2 minutes; allow to cool.
In a large bowl combine onion, bell pepper, ground round, sun-dried tomatoes, cheese, eggs, garlic, bread, basil, salt, oregano, thyme, and pepper. Press meat loaf mixture into prepared pan. Bake 1 hour, occasionally pouring off the fat. Remove from pan and let sit 10 minutes before serving.
