2 to 3 lbs boneless pork (cushion meat from Winco good choice)
Large onion, chopped
5 cloves garlic, chopped
Knorr bouilion cube, chicken or pork flavor
1 jar La Victoria medium salso verde (winco)
Salt, pepper, chipotle and/or ancho chile powder if desired
Fresh cilantro
Instructions
Cut pork into cubes. Brown in a little oil in a heavy dutch oven
or stew pot. Add onions and garlic and sprinkle with some
chipotle powder and ancho chile powder, plus a few grinds of
black pepper. Saute until onions start to release juice. Add
bottle of Salsa Verde and crumbled up Knorr bouilion cube and
bring to a simmer. Cover pot with lid and put in 325 degree
oven. Cook for 90 minutes, until pork is tender, adding water if
liquid level drops too low.
Remove from oven. If sauce is too thin pour off juice into a
sauce pan and boil down to a thicker cosistency, then pour
back over the pork. Add salt to taste. Stir in 1/2 cup chopped
cilantro before serving.
Serve with more Salsa Verde to add some of the fresher
texture and flavor.
Serving suggestions- over rice, in a tortilla with a slice of
avocado and mild white cheese, and maybe a bit of pineapple
and red onion, over a bed of lettuce with the same
accompaniments, to fill enchiladas with bottled salsa verde
and sour cream as the sauce..
