     Spiralized Sweet Potato - Chicken Casserole

Ingredients
3 Chicken breasts
1 sweet potatoes, spiralized
4 medium vine tomatoes4 dried guajilo chili peppers
1 tsp olive oil
1 onion, quartered
4 cloves garlic
1/2 tsp cumin
1 1/4 tsp salt
1/8 tsp pepper
 
1 cup frozen corn
1 (15oz) can black beans, rinsed and drained
Shredded low fat cheese

Instructions
Preheat oven to 400. Spiralize potatoes with the smallest middle blade and place on bottom of 9x13 casserole dish. Leave loose enough for other ingredients to sink between.
Cook chicken and shred
Bring a large pot of water to boil and add peppers and tomatoes. Cook 10 minutes for tomatoes and longer is peppers need it to become soft. Remove tops and seeds of peppers and skin of tomatoes. Put all in blender
Saute onion and garlic until lightly brown. Transfer to blender. Blend all together. Pour mixture into large bowl with chicken, corn and beans. Combine and pour over potatoes, getting the sauce down into the spirals. Top with cheese and cover with foil. Bake 1 hour. Yum!
