Boil lg pot of water...add salt...In skillet saute
pancetta with olive oil...cook until crispy...add
linguine to water and cook just under al'dente
drain and reserve 1 C pasta water...add pasta to
pancetta and toss for 2 minutes...remove from heat
and quickly mix in eggs mixed with grated
cheese...stir until egg thickens...use pasta water
to get the right Constance for you...add black
pepper and parsley and serve
