Preheat oven to 350°F. Combine 1st 8 items and
spices. Mix well. Mix ketchup, brown sugar, and
BBQ sauce and add a tsp of sauce in each muffin
cup. Spoon meat mixture into muffin cups.
Drizzle sauce on top of each “cupcake.” Bake
for 30 minutes. Remove from oven. Boil potatoes
whole for 15-20 minutes on high. Drain. Peel.
Add butter and milk and mash using a potato
masher. The mash needs to be creamy but stiff
enough to be firm when “piped” atop the meat.
Piping- Add mashed potatoes to a sandwich bag.
Cut a small corner off of the bag. Squeeze the
mixture on the meat in a circular fashion as if
applying icing on a cake. Sprinkle with
parsley. Voila!
