     Yellow squash muffins

Ingredients
2 pounds yellow squash
2 eggs
1 cup melted butter
1 cup sugar
3 cups self-rising flour
 

Instructions
Wash squash and cut off ends. Cut squash into 1-inch slices. Cook in a small amount of boiling water15-20 minutes or until tender. Drain well, and mash with a fork real good to get water out. Measure enough of squash to equal 2 cups.
Combine squash, eggs, and butter;stir well and set aside. Combine remaining ing. In a large bowl; make a well in center. Add squash to dry ingredients , stirring until moistened. Spoon into greased muffin pans, filling 3/4 full. Bake 375 for 20 minutes. It took mine longer than 20 minutes. So cook until firm in the middle.
