     Morning Glory Muffins

Ingredients
1/2 cup shredded carrots
1 Fuji apple, chopped
1/2 cup raisins
1 1/2 tsp. baking soda
1 tsp. cinnamon
1/4 cup brown sugar
1/4 tsp. salt
2 eggs
1/2 cup sugar
 
1 tsp. vanilla
1 1/3 cups whole wheat pastry flour
2/3 cup oil (or substitute applesauce)
3/8 cup shredded coconut
1/2 cup walnuts

Instructions
Preheat oven to 350 degrees. Mix flour, sugars, baking soda, cinnamon and salt. Wisk eggs, oil/applesauce and vanilla. Add to flour and mix until combined.
Add raisins, carrots, walnuts and 1/4 of the coconut. Stir gently to combine.
Spoon into paper-lined muffin tins. Fill 2/3 full. Top with the rest of the coconut.
Bake 25-30 minutes until cooked through.
Serving Suggestions
Omit coconut for Izzy!
