Preheat oven to 350 degrees.
Mix flour, sugars, baking soda, cinnamon and salt. Wisk eggs,
oil/applesauce and vanilla. Add to flour and mix until combined.
Add raisins, carrots, walnuts and 1/4 of the coconut.
Stir gently to combine.
Spoon into paper-lined muffin tins. Fill 2/3 full. Top with the rest of
the coconut.
Bake 25-30 minutes until cooked through.
