     Steak and Bean Burritos

Ingredients
1 lb steak of your choice
Salt and ground black pepper
1Tb EVOO
1 bell pepper, sliced
Half a medium onion, sliced
1/2ts ground cumin
1/2ts dried oregano
1/2ts chili powder
1/2ts garlic powder
 
Half a can of spicy jalapeno refried beans
4 burrito size tortillas
1/2c grated Cheddar
10oz of red, green or both mixed enchilada sauce
Optional- Sour cream, pico de gallo and fresh cilantro

Instructions
Prepare a grill at medium high heat. Also, preheat oven at 350 degrees.
Season steak with salt and pepper. Grill steak until cooked to preference. Allow to rest for 5 minutes and then slice against grain.
Heat oil in large skillet over medium heat. Add bell peppers, onions, salt, pepper. Then add cumin, oregano, chili powder, and garlic powder. Saute and stir until soften, about 5 minutes.
Spread beans on tortilla. Add steak, then some onions and peppers, then sprinkle some cheese. Fold and roll up tortilla into burritos. Lay in casserole dish. Pour enchilada sauce over burrito and sprinkle some more cheese. Bake in oven until cheese is melted and bubbly, about 20 minutes. Serve with optional garnishments.
