     Chicken Salad Platter

Servings   50 1/2 cup

Ingredients
8 lbs.CHILLED Diced Cooked Chicken
12 CHILLED hard cooked Eggs, peeled and diced
1 qt. diced Celery
1 cup diced Onion
3 cups red grapes, diced or halved (optional)
1 tsp Black pepper
1 tsp curry powder (optional) added to Mayo
1 qt. CHILLED mayo
50 pieces Lettuce Liner
 
50 Tomato Slices
50 Pinapple Rings

Instructions
1) Combine all of the pre-chilled ingredients and refrigerate and hold at 41' or less until serving. 2) Place lettuce leaf on plate, serve 1/2 cup of chicken salad on lettuce. 3)Garnish plate with1 sl. each of tomato, pineapple and dinner roll or crackers. OPTIONS- grapes could be eliminated from salad and a small bunch served in place of the pineapple garnish on the platter as well as any other type of fresh fruit- Strawberry, Melon slice, etc.
