     Beef Barley Soup (Noodle or Rice)

Ingredients
3 lbs Beef cubes ( or leftover beef, ground beef)
3 cups diced celery
3 cups diced onion
3 gal LS Beef Stock
1 tsp black pepper
3 cups diced carrots
2 cups. pearl barley (or 1 qt noodles) ( or 2 cups rice)
 

Instructions
1) Brown Beef 2) Add celery and onions and sauté until tender. 3) Add remaining ingredients and simmer for 1 hour. CCP- Hold at temp above 135'. If saving leftovers , cool remaining soup to 41' or lower within 4 hours. If reheating, heat to 165' within 2 hours
