     Potato Omelette

Ingredients
6 eggs
3 potatoes
1 small onion
olive oil
salt to taste
 

Instructions
Slice potatoes and onion, about ½ cm thick
Fry them together, with olive oil and salt to taste. That's the traditional way of doing it, but all the omelettes you ate were cooked in the microwave lol. I put the sliced potatoes and onion in a microwave save bowl, with a little oil and salt, cover with plastic wrap (make a few holes with a fork) and microwave on high for about 8 min. Take out, mix and microwave it 8 more minutes or until potatoes are soft (you can pinch them with a fork).
In a bowl beat the eggs, adding a pinch of salt for each. Count 1-2 eggs per person.
Put a little bit of olive oil in a non-stick skillet (make sure you have a plate bigger than the skillet!!), over medium heat. Add the potatoes and onions, and the eggs. With a spoon mix it until the middle is starting to get cooked (it's not liquid anymore). Stop mixing and let sit for 1-2 minutes. Tricky part- flipping the omelette. Don't freak out!! The worst that can happen is that you end up with scrambled eggs xD Put a plate on top of the skillet, hold it with your open palm, and flip it with a rapid movement (do this above the sink, just in case...). Then, put the omelette back in the skillet helping yourself with a spoon/spatula. Let cook for 2 min, and it's done!
Serving Suggestions
You can eat it warm with a side salad (no, it's not for breakfast), or cold cut in cubes and pinched with a toothpick each (ideal for a potluck)
