     Seafood Salad

Ingredients
30 hard cooked eggs, peeled and chopped
5 lbs imitation crab, flaked, chopped
1/4 c lemon juice
1 qt. chilled mayonaise
1 tsp Old Bay or Seafood seasoning
1 c finely diced celery (optional)
50 lettuce leaves
50 Tomato slices
Pickle Slices
 
Croissant or hot dog roll

Instructions
1) Chill all ingredients before mixing. 2) Store under refrigeration at 41' until served. 3) Portion 1/2 cup on a lettuce leaf.
