     Blueberry Pancake Muffins

Ingredients
1 1/2 c oats
1/2 cup unsweetened applesauce
1/4 cup REAL maple syrup
1/4 cup skim milk
2 large egg whites
1 tsp vanilla extract
1/2 cup sweetener that measures like sugar
1 tsp baking powder
1/8 baking baking soda
 
1/4 teaspoon salt
1 cup fresh blueberries, divided or 1/2 cup frozen thawed and drained

Instructions
Preheat oven to 350 degrees and prepare 12 cup muffin tin with wrappers or spray.
Combine the oats, applesauce, syrup, milk and egg whites, extract, sweetener, baking powder, baking soda and salt in a blender. Blend until smooth.
Pour the mixture into a bowl and fold in 3/4 cup blueberries.
Spoon batter in until almost full. Bake 18-20 minutes. Halfway through this baking time add additional 1/4 c berries to the muffins. Remove from pan immediately.
