Heat 1 T. olive oil in a large skillet on medium high heat. Sear sausage
links on two sides, approx. 5 minutes per side. Remove and set aside
In same skillet, add peppers, onions, salt and pepper. Cook until they
are translucent and browned, approx. 10 minutes. Stir often. Add
garlic, basil, oregano and thyme. Cook 5 minutes.
Add Worcestershire and wine and cook for 5 more minutes or until
desired color has been achieved.
Serve with avocado. Also great with pita bread / on a sandwich.
