50 8 inch flour tortillas

10 lbs shredded cheese
|
|
Combine the following
|
|
5 1/2 lbs cooked chicken strips
|
|
1 cup diced red onions
|
|
2 green pepper, chopped or canned chili peppers
|
|
1/2 cup cilantro (optional)
|
|
cover each tortilla with 1 1/2 oz. cheese
|
|
|
|
distribute 1/ 1/2 oz. chicken mixture over cheese on only half of tortilla
|
|
Grill or back until bottom is softened, cheese begins to melt
|
|
Fold cheese side over meat side. Flatten and bake until filling is warm.Cut into wedges
|
|
Serve with salsa and sour cream
