mix water, yeast, sugar, egg, oil and salt in a medium size bowl, let it proof. once the yeast has started to grow mix in one at a time 3 cups of white flour. mix should be sticky, oil a large bowl and place the dough into it with a towel over it in a warm place til dough has doubled in size.
once the dough has risen you can knock it down and let it rise another time or you can begin the next part. Start on a clean dry surface, place a handful of flour down and put dough on top of flour, start kneading the dough working in the flour. you may need to add more flour but not to much, the dough should spring back when poked. now time to make the rolls to rise. pinch off a golf ball size piece and tuck under all raw sticky edges before placing on a cookie sheet, continue on. let rolls double in size again with towels over them.
preheat oven to 350
now that the rolls are doubled in size, place them in the oven. I like the top rack. when they start to brown I brush butter on the tops, repeat a few times. once golden brown pull them out and let set or serve hot.
