     Portobello mushroom and Goat Cheese Sandwich

Ingredients
1 c EVO
6 T balsamic vinegar
3 to 6 cloves garlic minced
2 shallots minced.if not using add the larger amount of garlic
S&P
6 Portobello mushrooms stems removed
6 round sourdough buns.
goat cheese crumbled feta would be good as well
sun dried tomatoes in oil
 
fresh basil

Instructions
Mix together EVO vinegar garlic shallots if using S&P. Brush over both sides of mushroom. Coat several times in a hour to marinade them or you could place in a bowl and using about half the marinade coat booth sides and turn a couple of times.
Prepare a grill to med high temp. Lightly oil the rack. Place on grill with a weight on top. I used a cast iron fry pan for the weight. Cook on each side about 2 min each.
Toast bun. Baste the bun with reserved marinade. Top with mushroom and remaining ingredients. I also like to top with onion tomato and lettuce. Can be served hot or cold. I think the Mushroom would be a nice topping for a salad as well in place of a protein.
