     Confetti Rice

Servings   50 1/2 cup serving

Ingredients
1 1/2 qts dry rice
3 qts water
Cook rice
Chop and add in last 20 minutes of cooking or saute and stir into cooked rice
Diced red and or green peppers
Sliced scallions or purple onion
Sliced mushrooms (optional)
Shredded carrots. Choose anything that with give the cooked rice a colorful confetti appearance..
 

Instructions
CCP- Hold at 135' or higher until served. CCP- Cool leftovers to 41' or below within 4 hours. reheat to 165' within 2 hours if reusing.
