     Coconut Chia Seed Pudding

Ingredients
2 cups coconut milk
1/3 cup white chia seeds
4 tablespoons organic cane sugar (coconut sugar)
1 teaspoon vanilla extract
1 teaspoon almond extract
1/4 teaspoon ground cinnamon
1/4 cup unsweetened shredded coconut
 

Instructions
Combine chia sees, coconut milk, coconut sugar, extracts, cinnamon and coconut in an airtight container.
Stir until ingredients are combined. Cover and refrigerate for at least thirty minutes to an hour (or chill overnight).
Serving Suggestions
Serve with fresh fruit- strawberries, pomegranite seeds, and blueberries.
