Brown ground beef with onions, if you wish, along with salt and pepper in a nonstick skillet until crumbly. Drain. Layer zucchini and beef mixture alternately in slow cooker. Top with soup. Sprinkle with cheese. Cover and cook on low 2-3 hours, or until the zucchini is done to your liking.
