     Saint-Florent Cocktail

  Summer Cocktail

1/4 cup honey
6 Tablespoons of gin
3 Tablespoons of fresh lime juice
2 Tablespoons of Aperol
2 Dashes of Angostura bitters
Sliced lime
Champagne or Prosecco
2 chilled coupe glasses

Honey Syrup- Combine honey with 2 Tablespoons of hot water and stir until dissolved.
Assembly- Combine gin, lime juice, Aperol, 1 tablespoon of honey syrup, and 2 dashes of Angostura bitters in a cocktail shaker. Fill with ice. Cover and shake until the outside of the shaker is frosty, about 30 seconds. Strain into 2 chilled coupe glasses. Top off each with Champagne and garnish with a lime wheel.
The first time I made this, I had enough for 3 drinks. Since you top it off with the bubbly you can stretch it out if you like.
