1 lb. lean ground beef
|
|
onion, chopped
|
|
celery, chopped
|
|
29 oz can diced tomatoes
|
|
1 can beef broth
|
|
10-14oz Rotel or tomato sauce
|
|
spices/sauces of choice- salt, black pepper, Lawrey's...whatever you use for stuffed peppers
|
|
3-4 large bell peppers (green, red, yellow, orange) chopped
|
|
1/4 - 1/2 cup rice, depending on how thick you want your soup
|
|
|

Instructions |
|
|
Brown ground beef. Add onion and celery;
Saute for 5 minutes
|
|
|
Add beef broth, tomatoes, Rotel or tomato sauce and spices/sauces;
Reduce heat and simmer 30 minutes
|
|
|
Add rice and peppers;
Simmer additional 45 minutes for brown rice, 15-20 for white rice
|
|
|
FYI...I use brown rice because it holds together better
|
