Preheat oven to 350. Peel and slice peaches. Mix together flour, brown sugar, cinnamon, cornstarch, salt and sugar. Toss gently with peaches to coat.
Melt butter in 10 inch cast iron skillet over medium heat. Add brown sugar. stir constantly until sugar is dissolved and just starts to bubble. Remove from heat. Place bottom pie crust over caramel mixture.
Spoon peaches over pie crust. Cover with top pie crust. Brush egg whites over crust and sprinkle with sugar. Cut slits into pie. Bake at 350 for 1 hour 10 minutes. Shield with aluminum foil last 10 minutes

I use large sugar crystals on top to make it pretty. Serve with ice cream.
