     Turkey BBQ au Jus

Ingredients
10 lbs pulled turkey product, cut int managable pieces
1 cup MArino's Garlic spread, melt and saute-
2 cups diced onion
2 cups diced celery
2 -3 gallons of LS chicken stock made from base
2 cups ketchup
1/4 cup hot sauce (optional)
Simmer all ingredients in stock pot to 165'. Serve on soft kaiser roll
 

Instructions
1) Heat all ingreients to 165' 2) Hold at 135' or higher until service 3) Cool to 41' within 4 hours
