In large skillet-
|
|
1 cup olive oil
|
|
4 cloves minced garlic
|
|
4 qts. fresh sliced mushrooms, sauted in oil
|
|
2 tsp black pepper
|
|
3 c marsala cooking wine
|
|
3 cups chicken broth
|
|
3 cups cold water plus1 1/2 cups corn starch (make a paste)
|
|
|
|
1-2 cups chopped fresh parsley
|
|
Simmer sauce until thickened. Ladle over chicken. Cover and bake.to 165'
