In large pot, boil water and add peaches. Let peaches boil for 30
seconds. In second large pot, take peaches and plunge into an ice
bath. This will make the peach skins come off easily.
Mix lemon juice, sugar, flour and cinnamon in large bowl. One at a
time, cut peaches into moons and add to mixture.
Place in pie crust.
TO COOK PIES-
Preheat to 425 degrees and place on cookie sheet. Bake for 35 - 45
minutes.
