1. Make a bottom layer of tortilla chips on a microwave-safe plate.
2. Layer with chicken, pepper if desired and cheese then microwave on High for 1 minute or until cheese melts.
Top with your favorite toppings such as sliced black olives, chopped tomatoes, sour cream and/or lettuce just to name a few. You can also leave out the chicken and replace it with refried beans or do both for extra protein.
