     Salmon- Grilled

Ingredients
Salmon fillets
soy sauce
lemon juice (preferrabley fresh)
extra virgin olive oil
 

Instructions
Lay thawed salmon fillets on paper towels. Cover with more paper towels and gently press to remove most all the excess moisture.
Set raw fillets in large pan with sides. Coat the top of each fillet with soy sauce, squeeze on a bit of lemon and a sparing amount of olive oil to finish. Flip over and repeat. Let sit in marinade 15 min or so. Salmon should be stained brown a bit.
Heat grill on high 450 or hotter. Grill salmon fillets 2-3 min with the lid down on the first side. Flip and continue grilling on each side until opaque and cooked through, and the edges are a bit browned. If the fish sticks to the grill and won't flip..it's not quite done on the first side.
Do not over cook. It will taste fishier the longer it cooks.
Serving Suggestions
Serve with carrot souffle and rice
