     Buffalo Hot Wings

Category   Entrees - Maindishes
Sub Category   Grilling
Servings   2

Ingredients
2 lbs chicken wings (about 12 wings)
3 T butter, melted
4 T bottled hot pepper sauce (Frank's Original or Crystal brands)
1 T paprika
1/2 tsp salt
1/2 tsp cayenne pepper
1/4 tsp black pepper
Montreal Steak seasoning (for grilling only)

Instructions
Create a marinade by stirring together the melted butter, hot pepper sauce, paprika, salt, cayenne pepper, and black pepper.
TO GRILL- Season wings with a Montreal Steak Seasoning. Grill until fully cooked. Apply wing marinade to one side, cook for 2-3 minutes then turn the wings and repeat. Liberally pour remaining marinade on wings before serving.
TO BROIL- Put aside 2 T of marinade. IN a large bowl or plastic bag, marinade wings in the rest of the sauce for 30 minutes at room temperature. Drain marinade. Place wings on the rack of a broiler pan. Broil 4-5 inches from the heat for about 10 minutes on each side, until chicken is tender and no longer pink. Remove from oven and baste with reserved marinade.
Blue Cheese Dip- 1/2 c sour cream, 1/2 c crumbled blue cheese, 1/2 c mayonnaise, 1 T white wine vinegar or white vinegar, and 1 clove minced garlic. Combine ingredients in a blender or food processor. Blend or pulse until smooth. Cover and chill up to a week.
Serving Suggestions
Serve with Blue Cheese Dip or Ranch Dressing and celery and carrot sticks.
