     Greek Salad

Ingredients
1 cucumber
1 red onion
2 cups baby spinach
200g cherry tomatoes
80g olives
100g feta cheese
1 tsp dried oregano
4 tbsp olive oil
1 lemon
 
1 red bell pepper
1 pinch of black pepper
1 pinch of salt

Instructions
1. Rinse and dry baby spinach, add to bowl. 2. Wash and slice the cucumber into 1cm wide discs (approx), add to spinach. 3. Slice bell pepper into thin strips and add to bowl. 4. Slice red onion into thin semi circles and separate semicircles, add to cucumber. 5. Rinse and halve cherry tomatoes and add to bowl. 6. Cut feta cheese into 1.5 by 1.5 cm cubes or drain pre-cut cubes and add to bowl. 7. Slice olives into halves and thirds and add to bowl. 8. Mix olive oil, lemon juice, pepper, salt and oregano and drizzle over.
Serving Suggestions
Serve immediately.
