     Vegetable Chips with Yogurt Dip

Ingredients
1 Western Eggplant
1 Zucchini
1 Russet Potato
1/4 Cup Cornstarch
1/4 Cup Olive Oil
1/4 Cup Water
1 Pinch Salt
3 Cups Greek Yogurt
1 Bunch Coriander
 
1 Lemon
4 Tbsps Garlic Powder

Instructions
1. Preheat Airfryer to 390F(200C) 2. Cut Eggplant,Zucchini, and Potato using Mandolin Slicer. 3. In a mixing bowl combine cornstarch, olive oil, water, and the sliced vegetables. Mix and coat the vegetables evenly. 4. Place half of the vegetables in the air fryer. Wait 12-13 mins for the chips to cook and then place the other half of the vegetables in the fryer. Wait 12-13 mins and take the second half of the chips out. 5. Garnish the chips with salt.
5. Squeeze the lemon and chop the coriander for the yogurt dip. 6. Mix the Greek Yogurt, lemon juice, garlic powder, and chopped coriander in a mixing bowl to make the yogurt dip. 7. Garnish with more coriander. 8. Serve the vegetables chips with the yogurt dip.
