     Veggie Burgers (based on Linda McCartney Sausages)

Ingredients
4 Linda McCartney Sausages (thawed and microwaved until soft but uncooked)
Tinned Haricot Beans (Drained and Washed)
Juice of either a lemon or lime
Dash of Olive oil
1 Egg white
Breadcrumbs
2 tsp Smoked Paprika
1 tsp Cumin
Butter
 
Cooking spray

Instructions
Mash beans, thawed sausages, and lime or lemon juice (I prefer lime) in a large bowl until it takes on a homogeneous texture. (This is hard work but the rest is easy)
Add the smoked paprika, you may need more than a teaspoon, just add it until it smells nice and add a hint of cumin.
Add egg white and olive oil and mix well with hands then add breadcrumbs gradually whilst mixing until the mixture has a sausage meat like consistency. If it becomes too dry add a dash more oil. Form this into burgers, it should make about 4.
Coat a frying pan with cooking spray and get hot then cook the burgers turning frequently and adding the occasional squirt of cooking spray to ensure they do not become dry. Once the burgers are golden brown and starting to darken add a knob of butter to the centre of the pan and let the burgers soak this up for a richer flavour.
Serving Suggestions
Sesame seeded buns with cheese & fried onion and sweet potato fries for the full effect. They also go very well with sweet chilli sauce!
