2 lbs halibut or other mild, thick white fish, skin removed and cut to 6 equal filets
1/2 c mayonnaise
2 tsp. wasabi paste
2 tsp. sugar or maple syrup
2 tsp. salt
1 c medium coarse ground cornmeal
1 tsp. ground ginger
1 c medium coarse ground cornmeal
Instructions
In flat, shallow baking dish, combine cornmeal, salt and ground ginger. Mix well to evenly
distribute.
Line a baking sheet with foil. In small bowl, combine mayonnaise and wasabi paste and mix well.
Using a spoon, dollop each fish filet with an equal amount of wasabi mayonnaise (about 1
heaping TB each) and use hands to evenly rub over both sides of filets, working with one filet at
a time.
Place each mayo-coated filet into cornmeal mixture and lightly coat, shaking off excess. Place
each filet onto foil-lined baking sheet.
Bake @ 400F for 12 - 15 minutes, and center of fish is opaque, while exterior is lightly browned.
