1 lb. cooked, boneless, skinless chicken breast, diced to small chunks
3 tart-sweet apples, cored and quartered, sliced thin
1/8 c lemon juice
1/2 small red onion, thinly sliced to half moons
1/8 c apple cider vinegar
4 c shredded cabbage
1T olive oil
1 tsp. salt
2T grainy mustard
1/4 c apple cider/juice
1T maple syrup
1/2 tsp. allspice
1/2 tsp. sweet or hot smoked paprika
1 tsp. ground black pepper
1/3 c dried cranberries or raisins
1/3 c toasted pecan halves, chopped
2 tsp. fresh rosemary or sage, minced
Instructions
In medium size mixing bowl, combine apples and lemon juice and toss well to fully coat surface of apple slices.
In small bowl, combine sliced red onion, apple cider vinegar and 1/2 tsp. salt. Toss well and allow to sit for 5 minutes.
In large serving bowl, add cabbage. Add apples and red onions, with liquid from both bowls. Add olive oil, apple cider, maple syrup, mustard, 1/2 tsp. salt, pepper, allspice and smoked paprika. Toss mixture well to fully combine.
Add diced, cooked chicken, cranberries/raisins and rosemary/sage. Toss to combine. Prior to serving, fold in chopped pecans.
