1. Heat 1 Tbsp oil, cook chicken in salt and pepper and then set aside.
2. Add oil, stir in garlic, onion, carrots, celery and cook until tender.
3. Add thyme and then whisk in stock, bay leaves, and one cup of water before bringing to a boil.
4. Stir in orzo, rosemary, and chicken.
5. Reduce heat and simmer until orzo is tender.
6. Stir in lemon juice.
