1 lg. apple, peel and core removed, chopped to small dice
1/4 c creme fraiche or sour cream
pinch of salt
1/3 c golden raisins
Instructions
Cook egg noodles in lightly salted, boiling water until just soft, about 4 minutes. Drain and place
noodles in large mixing bowl. Add butter and mix to distribute evenly throughout hot noodles.
Stir in cream fraiche/sour cream.
In medium mixing bowl, combine beaten eggs, sugar, applesauce, vanilla, pumpkin pie spice,
chopped apple and salt. Mix well.
Pour liquid mixture into bowl of noodles and stir to evenly distribute. Stir in raisins and transfer
to baking dish lightly coated with butter.
Cover with foil and bake @ 350F for 30 minutes. Remove foil and bake uncovered for 25
minutes, and top is lightly browned.
Allow to sit for 15 minutes before serving. Sprinkle with additional cinnamon or pumpkin pie
spice before serving if desired.
