1 regular size bag of fresh spinach
|
|
1/4 to 1/2 of a medium firm fresh pear, thinly sliced
|
|
1/4 to 1/2 c red onion, thinly sliced
|
|
2 slices of bacon, chopped
|
|
EVOO
|
|
2tb cider vinegar
|
|
1tb pure maple syrup
|
|
1/4 ts kosher salt
|
|
1/4ts ground black pepper
|
|
|
|
1/2c toasted walnut halves (optional)
|
|

|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|

Instructions |
|
|
Combine spinach, pear and onions in a large bowl.
|
|
|
In a small skillet, cook bacon over medium heat
until crispy. Using slotted spoon, transfer bacon
to a towel lined plate.
|
|
|
Add enough EVOO to pan drippings to make 2tb
total. Add vinegar, syrup, salt and pepper.
Bring to a simmer.
|
|
|
Immediately drizzle dressing over salad and gently
toss. Add bacon and walnut. Serve immediately.
