Remove skin from breasts, pound out until thin (I normally cut
them in half horizontally to make
it easier to pound out thinly)
Mix flour, bread crumbs, corn flakes, salt, pepper, chili powder
Mix egg and milk (~ same amount of each) and whisk until
uniform liquid
Put skillet on and heat to high temperature, add vegetable oil
Start with leg and/or thighs. Also add skin to skillet
Place chicken in egg mix, put into flour mix, coat thoroughly
Place in fry pan, fry on each side 3-4 minutes, turn down heat
if browning too fast
Remove from fry pan, place in 200 C oven
Finish frying chicken, remove from heat and remove any burnt
coatings from fry pan

Gravy instructions-
Cut one piece of fried skin into very small pieces
Add ~2-3 tablespoons of flour and diced skin into fry pan, mix
into oil…resist temptation to add
a lot of flour
With heat off, slowly add milk until slightly runny
Turn on heat, keep mixing. As it thickens, add more milk until
consistency is what you want
Add salt and pepper to taste
Enjoy with mashed potatoes!
