     Chicken with Cauliflower and Olives

Ingredients
1 lb chicken breast
1 bunch fresh thyme
1 head cauliflower
1 shallot
3 Tbsp olive oil
1/2 tsp celtic sea salt
1 tsp pepper
zest of one lemon
1/4 cup lemon juice
 
1 cup kalamata olives
5 cloves garlic

Instructions
1. Rinse and pat dry chicken. 2. Spread thyme evenly in bottom of baking dish. 3. Place chicken over thyme and scatter cauliflower around the chicken. 4. In small bowl, combine shallot, olive oil, salt, pepper, lemon zest, lemon juice, olives, and garlic. 5. Pour over chicken and refrigerate for at least one hour or overnight. 6. Bake at 400 degrees for 45 - 55 minutes until chicken is cooked through and cauliflower is well browned.
