     Beef Meatballs Moroccan Tagine

Ingredients
meatballs - 1 pkg Costco use 1 of the 2 packs
olive oil - 2 Tbls
onion - 2 roughly chopped
peppers - 1 yellow and 1 red seeded and roughly chopped
dried apricots - 4oz finely chopped
RAS El Hanout Morocan spice powder - 4 tsp
Passate - 500 grams or 18oz tomato puree in bottle at World Market
salt
pepper
 
chicken stock - 1 pt or 300ml

Instructions
1 Heat oil in large pot or casserole over medium heat. Turn to low, add the onion and cook for 3 minutes or until softened, stirring often. Do not brown, they should stay golden. 2 Stir in RAS El Hanout and fry for 1 minute, the stir in peppers and cook 2 minutes more. 3 Add apricots, passata and stock. Bring to a simmer, scraping p and bits stuck to the bottom of the pan.
4 Add the meatballs and simmer uncovered for 15 minutes or until cooked through, stirring occasionally. Season with salt and pepper to taste Serve with Costco Quinoa and Wild Rice or Couscous.
NOTE 1 can be refrigerated for 2 days or frozen for 3-4 months. NOTE 2 This can be made using 3 to 4 chicken breasts cut into 1 to 1.5 inch pieces. Brown chicken pieces first using oil, then remove from pot adding a little more oil if required and follow the recipe above.
