1 Heat oil in large pot or casserole over medium
heat. Turn to low, add the onion and cook for 3
minutes or until softened, stirring often. Do not
brown, they should stay golden.
2 Stir in RAS El Hanout and fry for 1 minute, the
stir in peppers and cook 2 minutes more.
3 Add apricots, passata and stock. Bring to a
simmer, scraping p and bits stuck to the bottom of
the pan.
