     Curried lentil soup

Ingredients
1 1/2 T olive oil
1 large onion
2 cloves garlic, minced
1 1/2 t cumin
6 c low-sodium vegetable broth
1 1/2 c red lentils
2 large carrots, coarsely grated
4 sprigs thyme
1 t ground cinnamon
 
2 bay leaves
1 c light coconut milk
salt and pepper
cilantro for garnish

Instructions
Heat oil in a pot. Add the onion and cook, covered, for 6 minutes. Stir in the garlic and cumin.
Ass the broth, lentils, carrots, thyme, curry powder, cinnamon, and bay leaves; bring to a boil Reduce heat and simmer, stirring occasionally, until the lentils are just tender, 12-15 minutes.
Add the coconut milk and 1/2 t ea. salt and pepper, simmer for 5 minutes. Serve with cilantro.
