cream sugar, butter, and cream cheese until light and fluffy.
Add vanilla and egg. Combine flour, pudding, baking powder,
and salt. Add to cream cheese mixture.

Cover and refrigerate for a least 1 hour. Roll doll in to balls,
flatten with palm of hands. Roll edges in crushed pistachios.
Bake on parchment paper or slipmat at 350-375, 9-12 minutes
or until edges lightly brown. Remove from pans to wire racks
to cool. Store in air tight container.
