     Pistachio Cream Cheese Cookies

Ingredients
1 cup sugar
1 cup butter; 1 stick salted 1 stick unsalted
8 oz cream cheese room temperature
1 teaspoon vanilla
1 egg
3.75 oz package pistachio pudding
1 teaspoon baking powder
1/2 teaspoon salt
60 shelled pistachios (about 1/3 cup) finely chopped
 

Instructions
cream sugar, butter, and cream cheese until light and fluffy. Add vanilla and egg. Combine flour, pudding, baking powder, and salt. Add to cream cheese mixture.
Cover and refrigerate for a least 1 hour. Roll doll in to balls, flatten with palm of hands. Roll edges in crushed pistachios. Bake on parchment paper or slipmat at 350-375, 9-12 minutes or until edges lightly brown. Remove from pans to wire racks to cool. Store in air tight container.
Taste better the next day!
