3 C brussel sprouts, ends trimmed, yellow leaves removed
3 Tbl olive oil
salt to taste
Rosted Butternut squash
1 1/2 lb butternut squash peeled, seeded and cubed
2 tbl olive oil
3 tbl maple syrup
1/2 tsp ground cinnamon
2 C pecan halves
1 C dried cranberries
Instructions
Preheat oven to 400...Lightly grease the foil
lined baking sheet with 1 tbl olive oil. Cut
brussel sprouts in half. in a medium bowl combine
brussel sprouts, 2 tbl olive oil and salt to
taste. Toss to combine. Place on a foil lined
sheet and roast 20-25 min. During the last 5-10
minutes of roasting turn them over for even
browning
Squash...Preheat oven to 400. Lightly grease the
baking sheet with 1 tbl of olive oil. In a medium
bowl combine squash, 1 tbl olive oil, maple syrup
and cinnamon and toss to mix...Bake 20-30 minutes
Assembly.... In a large bowl combine roasted brussel
sprouts, squash, pecans,and cranberries and mix to
combine
