Spray slow cooker with cooking spray. In a large bowl, combine sugars, cinnamon, and salt. In another large bowl, whisk egg white and vanilla until frothy.
Pour almonds into egg white mixture and stir to coat.
Pour coated almonds into cinnamon sugar mixture and toss to coat.
Pour into slow cooker and heat on low 3 hours, stirring every 20 minutes.
After 3 hours, add 1/4 c of water and stir well. Cook another 20-30 minutes. Meanwhile, line a baking sheet with parchment paper. Pour almonds onto prepared baking sheet. Separate almonds and allow to cool. Enjoy!
