     Gratin Dauphinois

Ingredients
1 garlic clove, halved
3 or 4 potatoes (1-1/2 lbs.), peeled
1-1/2 cups milk
1-1/2 cups cream
Salt and pepper to taste
Pinch of nutmeg
1/3 cup grated Gryère cheese (optional-we don't)
1 tablespoon butter
 

Instructions
Rub 1-1/2-quart shallow baking dish with garlic, then generously butter dish. Slice potatoes about 1/4 inch thick. Do not soak in water as this removes the starch needed to hold slices together. Bring milk to boil in a large saucepan. Add potato slices. Boil 15 minutes or until partly tender. Drain, discard milk. Return potatoes to saucepan. Add cream, salt, pepper, and nutmeg. Bring to a boil. Reduce heat and simmer 10-15 minutes until potatoes are tender but not falling apart. Preheat broiler. Mixture should be very moist. Taste for seasoning. Spoon into prepared baking dish. Broil warm potatoes until golden brown. Serve in baking dish.
If adding cheese, sprinkle with cheese and dot with butter before broiling.
Can be prepared 1 to 2 days in advance, covered and refrigerated. Reheat in a 350F degree (175C degree) oven until bubbling. Broiled warm potatoes until golden brown.
(Curdling is prevented by parboiling the potatoes in milk.)
