     Vegetable Soup

Ingredients
1 tbsp olive oil
1 medium onion, chopped
1 large carrot, peeled and chopped
1 cup mushrooms, sliced
1 zucchini, chopped
3 cloves garlic, minced
1 bouillon cube
6 c water, boiling
15 oz diced tomatoes
 
1/2 cup uncooked quinoa
16 oz black beans
16 oz chick peas
1 tsp curry powder
1 tsp cinnamon
1 tsp nutmeg
2 cups spinach, chopped
Salt and pepper to taste
Chicken/Beef/Turkey (optional)

Instructions
Heat oil in large pot. Add onion and sautee until soft. Add carrots, mushrooms, zucchini and garlic. Sautee 5-7 minutes.
Pour water over bouillon cube and stir to dissolve. Add mixture, tomatoes, quinoa, black beans, chickpeas and spices to veggies.
Bring to boil then simmer 15-20 minutes. Add chopped spinach, simmer another 15-30 minutes. Add salt and pepper as needed.
Serving Suggestions
Add celery and corn
