     Easy Skillet Breakfast

Ingredients
8 pieces thick cut bacon cut into 1 inch pieces
2 cups frozen loose-pack hash brown potatoes
6 eggs beaten
2 tbsp. milk or water
1 tsp. prepared mustard
1/2 cup shredded sharp cheddar cheese
 

Instructions
Cook bacon in non-stick skillet on medium for 10 min. or until crisp. Drain. Add potatoes to skillet cook 5 minutes or until brown. Combine eggs, milk and mustard in small bowl.
Pour evenly over potatoes and bacon, cover. Turn heat to low, cook 8 minutes more or until eggs are set. Sprinkle with cheese. Cover until cheese melts. Cut into wedges.
