     Karen's Salsa Recipe

Ingredients
Mix in Large Teflon pan
1 Lg. Can V-8 juice (46 oz.)
1 Can Tomato Paste (11oz.)
1 C. Vinegar
1/4 C. Sugar
1/4 C. Salt
1 T. Chili Powder
1/4 tsp Cumin
1/4 tsp Tumeric
 
Chop
3 Lg. Red Tomatoes
6 Green Tomatoes
4 or 5 Lg. Onions
6 Jalapeno Peppers (leave seeds in for hot or remove for a mild salsa)
12-14 mixed peppers (Anaheim, great horn, sweet banana, etc.)
1 bell pepper (red or green)
3 garlic cloves

Instructions
Add Chopped ingredients to mixture. Simmer 30 minutes in the Teflon pan, stirring often. Fill jars and process for canning or freeze. Tip- a food processor works great for chopping ingredients so there aren't big chunks in your salsa. Disclaimer- This is NOT my recipe. I received this recipe from my husband's cousin over 10 years ago. I believe it was his aunt's. For the vegetables other than what we grow, I shop at Cash and Carry. I make this in bulk so I buy their chopped onions (bonus-no tears shed here) and they carry good variety of fresh
